Depression Vs Sandwiched French Toast!!

It took me some time to write this article. In fact my editors mailed me twice saying, 'what happened, where the last instalment of my anti-depressant series is?' That was a fair enough question. I have taken way more time to pen this article down. And the reason- well it’s just that I am in seventh heaven after my ‘Depression Vs One Pot Pasta’ post. Not only was it way too colorful and fancy for warding off depression; but it was also the most liked, read and ‘made’ recipe of mine. I garnered much ado for writing the recipe, in the virtual and real world. And compliments really lifts your spirit high. So, you see; I wasn’t really sure if I would be able to write on being pressed, stressed and depressed; all at the very same time!

But today, it’s different. Today I really feel stressed. My toddler has waded off into a world full of knowledge with strangers around him. As I sit in the reception of the school, typing furiously on my keypad, my insides are churning in tension. I might look composed on top, but only I know how much I feel like a ticking time bomb inside. Every time the reception door opens, I pry to see if I can get a glimpse of my child somewhere. Needless to say, it’s the very first time I have left my child away from me, with strangers, for this long. Today, I sit here checking on his progress, giving myself the satisfaction of being close to him and be on his beck and call. Tomorrow would be a bigger tussle. Tussle more for the mom in me. And so I need something to ward this feeling off. This is the time, I feel I am ready to have my most famous breakfast all day dish- Sandwiched French Toast.

Now, in all fairness you don’t have to stuff just sweet fillings or a store bought Nutella in a jar. Obviously a homemade nut butter is preferred, which can be jazzed up with some cocoa powder and icing sugar. But this dish will taste awesome with anything really. And it’s hardly a recipe too. You can make your own spin and follow these simple steps to get a savory or sweet snack/breakfast ready in a moment’s notice. I will give you many filling options but my hubby likes the one with Nutella and that is what I make mostly. But any day I prefer a cheesy sharp French toast to this dessert like Nutella filled ones.

Ingredients
3 eggs
3 tbsp of milk
Sliced bread
Oil/butter

Filling
Savoury
Grated cheese mix with Gouda and/or cheddar mixed with parmeggiano
Finely chopped green chilies to taste
Finely chopped roasted garlic to taste
Finely chopped spring onion to taste
Sweet
A dollop of nut butter and/or jams

For the Starters, My Love!!

The weekend has finally set in. And a new house means a series of house warming sessions with friends and family alike. What better time than to write this article? For the Starters, My Love!




Life in a big city is very simple!! Workdays, weekends and booze.. Be it the sophisticated bubbly or the very collegian old monk with coke; preferences may be a lot but need, boils down to one.. To be merry!!! Friday night, office-over, a handy preferred poison, someone by your arms and a kitchen to rummage through… But boozing without snacks is a crime. And thou shalt never commit that!!
So I will dedicate this article to all those who want to learn how easy it is to be NOT a criminal. Order for your favourite flavour of chips and whip up a yummy hung curd dip to start with. How??? There you go:


Get that tub of yoghurt out from your refrigerator and put it in a clean kitchen towel to drip off the excess water.
While the curd hangs on your sink (hung curd); chop finely some olives, capsicum and carrots. You may even process it in a food processor, if you posses one that is!! (Coughs out loud.. I don’t!! Donation, anyone??)
Now whisk the hung curd in a bowl with some sugar and rock salt, as to your taste. Now add the tiny veggies and for that really cool tinge, add a hint of the solution in which the olives were kept.
Season well with pepper, oregano, and viola!! 7 minutes flat and a gourmet hung curd dip ready. So why wait; quickly gulp down your first peg… Cheers!!!
Now for the second peg of the night, you can’t possibly be eating the same thing. The alcohol in your system will guide you to your fridge and search for another delectable snacks. And as usual, I have a solution.
Stack up on a stock of salted crackers. Now rummage thru your fridge and take out yesterday’s left-over veggies (anything without bitter gourd and eggplants is welcome).
Put it through a slotted bowl and wash away all spices. Now chop one small onion and in a little oil fry it till light brown. In goes the veggies and mash everything well with your ladle. Now season it with your favourite dried or fresh herbs, salt and pepper. Once its dry and looks quite like a delicious mash, take it off the heat and spoon a tsp of the mash on the crackers to make your signature bruschettas, made in seconds..
For the third peg; screw it!! At this point even frozen bread is an awesome snack!!!Cheers!!This article of mine, along with many more were covered in an E-magazine called Smart Indian Woman.

Twe-cipe: Paprika Squids

A lazy Friday afternoon is a perfect way to wring in the weekend! Remembering the crazy week that was and the crazier weekend that's about to hit you. So here is a quick twe-cipe to suffice that thoughtful hunger. Twe-cipe is a wonderful concept. Its basically a recipe that can be tweeted using less than 140 characters, which is the limit of a single tweet on twitter. Wonderful because this would mean a fast and easy recipe, that anyone and everyone can make. Today for lunch, I decided to go the healthy fast food way, and thus here is my twe-cipe; which is perfect at any time of the day, and made in exactly 10 minutes.
The ingredients have no specific amounts. use as much or as little as you may wish to. 

Ingredients
Generous amounts of Butter
4 Squid tubes cut as rings
Half a pod of Garlic, peeled and minced
Salt
2 huge pinches of Paprika
A pinch of Dried Oregano (optional, but highly recommended)

Method


Dump in a generous amount of butter in a wok with fresh minced garlic. Put on medium heat stirring occasionally till the butter melts and the garlic perfumes through the kitchen. 

A big pinch of paprika and oregano (optional) hits the wok next followed with fresh cut squids rings. 

Stir and cook till the meat is tender, keeping a watchful eye on not overcooking it. Salt it as required, and serve along with crisp toast to soak in all the flavoured butter and fresh cut salad to balance the richness!
